We kept our Greek chicken kabobs simple by starting with a Greek salad dressing as the base for our marinade. It gets doctored up with a bit of seasoning and fresh garlic for a big kick of flavor.
Add the Greek dressing, garlic, and Greek seasoning to a large bowl or a plastic ziptop bag and whisk well to combine.
Add the chicken to the marinade, seal, and refrigerate for at least 30 minutes and up to 6 hours.
About 30 minutes before cooking, place 8-10 wooden skewers in a large bowl of water to soak. When ready to cook, thread 5-6 pieces of chicken onto each skewer.
Spritz your air fryer basket with non-stick spray and arrange the skewers in the basket in a single layer. If you have a rack, you can use it to make two levels of skewers and everything will cook at once.
Air fry at 390 degrees for 10 minutes, flipping each skewer halfway through cooking. Chicken is done with the internal temperature reaches 165 degrees. Use a meat thermometer for best results.
Serve hot.

This recipe makes 10 kabobs. Nutrition information is based on 1 kabob.
