These taco pinwheels make a nice low carb lunch, if you use a low carb tortilla. But they're also perfect for game day or as an appetizer for your next party.

Brown the beef in a small skillet over medium heat, crumbling the meat as it cooks.
Once the beef is cooked through, drain the grease and add ¼ cup of water and the taco seasoning. Stir to combine and cook for 5-10 minutes, until the liquid has evaporated.
Add the seasoned beef, cream cheese, and sour cream to a bowl and mash the mixture together with a fork until well combined. Taste and season with salt, if needed.
Divide the mixture evenly between 2 tortillas and spread to the edges.
Sprinkle the cheese evenly over each tortilla and roll up tightly.
Use a sharp knife to trim the edges of the tortilla off and then slice each tortilla into 5 pieces.
Arrange the pinwheels in an air fryer basket in an even layer. Cook at 370 degrees for 5 minutes.
Serve immediately.

This recipe is a great way to use up leftover taco meat. You’ll need about 1 cup of cooked beef.Serve these with salsa or guacamole for dipping.To make this recipe low carb, use low carb tortillas.
