These Greek Chicken Bowls are made with air fried chicken, zucchini, and bell peppers with Greek dressing and seasoning, fresh veggies, and tzatziki sauce!
Chop the chicken into bite-sized pieces and place in a large bowl.
Slice the zucchini into rounds and add to the chicken. Dice the pepper and add to the bowl.
Pour the Greek vinaigrette, Greek seasoning and pepper over the chicken mixture and stir to coat.
Spritz the air fryer basket with nonstick spray and add the chicken and vegetables to the basket. Air fry at 400 degrees for 10-12 minutes or until chicken reaches 165 degrees internally. Shake basket halfway through cooking.
Divide the rice evenly between 4 bowls and top with the chicken and vegetable mixture.
Arrange the tomatoes, cucumbers, onion, kalamata, and feta over the top and drizzle with tzatziki.
Notes
We use Cavender’s Greek Seasoning, which is a bit salty. We don’t add any additional salt because of this, but if you’re using a less salty Greek seasoning blend you may want to add salt.Feel free to adjust any of the toppings as you see fit. Half of my family leaves off the cucumber and olives and they still love these bowls!Serve with warm pita bread and a squeeze of fresh lemon juice, if desired.To make this a low carb meal, swap the cooked white rice for cooked cauliflower rice.
