These quick and easy Air Fryer Buffalo Chicken Meatballs are perfect snacks or appetizers for watching the big game or hosting an event! We love to serve these with some ranch dressing for dipping, or more buffalo sauce!
Add all of the ingredients to a mixing bowl and mix well with a wooden spoon.
Use a medium cookie scoop to portion into 25 meatballs. Roll each into a ball.
Brush your air fryer basket with oil or (preferred) line with a piece of perforated parchment paper. Place the meatballs in the basket in a single layer. You may need to work in batches, depending on the size of your air fryer.
Cook at 400 degrees for 8 minutes or until the meat reaches 165 degrees.
Remove the cooked meatballs to a plate and cover with foil while cooking any remaining meatballs. Meatballs are best after they’ve rested for about 5 minutes.
Serve with an additional drizzle of buffalo sauce and ranch dressing or with ranch dressing as a dip, if desired. Garnish with chives or green onions, if desired.
Notes
Shredding your own carrots on a box grater will give you the best results. The carrots will melt into the meatballs a lot more, rather than leave crunchy bits like you’ll get with store bought shredded carrots. If you prefer the crunch, use store bought. Be sure to use ranch seasoning mix and not ranch dip mix. The dip is a lot saltier than the seasoning.We have not tested this recipe with crumbled blue cheese in place of the cheddar, but it would likely work well if it’s crumbled up finely.
