Bacon wrapped scallops are best cooked in the air fryer! The air fryer gives the scallops a great texture, and the bacon cooks right with it for perfect flavor!
Slice the bacon in half and place in a greased air fryer basket.
Air fry at 400 degrees for 3 minutes or until bacon is partially cooked, but not at all crispy. Drain on a paper towel lined plate until cool enough to handle.
Pat scallops dry and wrap the edges in bacon. Secure with a toothpick.
Whisk together the maple, butter, soy sauce, and garlic powder in a small bowl.
Place the scallops in the air fryer and brush with the sauce.
Air fry at 400 degrees for 8 minutes, until bacon is crisp and scallops are opaque and just cooked through. Do not overcook.
Sprinkle with cracked pepper and parsley before serving.
Notes
Be careful not to overcook the scallops or they'll get tough and chewy. They should be opaque and feel a bit like Jello that is perfectly set when touched. You may use a meat thermometer to test for doneness. If using a meat thermometer, scallops should be 125 degrees - remove from the air fryer at 120 degrees and let rest for 5 minutes to come to temperature.
