This Buffalo Chicken Grilled Cheese is loaded with saucy, spicy chicken and plenty of cheese, all sandwiched between buttery toasted bread. Made in the air fryer for a quick lunch in less than 10 minutes!
Spread the outsides of each piece of bread with butter and sprinkle with the ranch seasoning.
Arrange two pieces of bread, butter side down, in the air fryer. Top each piece with 1 slice of cheese.
Stir together the chicken and buffalo sauce to combine. Divide evenly between the bread.
Sprinkle the chicken with the blue cheese and top with the remaining slices of cheese. Place the second piece of bread on the sandwich, butter side up.
Air fry at 360 degrees for 4 minutes, flip, and continue cooking for 3-4 minutes or until bread is as golden brown as you’d like.
Serve hot with ranch or blue cheese for dipping.
Notes
For extra spice, use Frank’s Red Hot rather than buffalo sauce. For a more mild chicken, use less sauce.Our air fryer whole chicken makes great leftovers to use in this sandwich, but you can also purchase a rotisserie chicken from the store. If using canned chicken, look for one that is low in sodium or your sandwich will be fairly salty.
