Instructions
Chop the salmon into 1 inch chunks. Pat dry with a paper towel.
Add the flour and Old Bay to a shallow dish and stir to combine.
Add the eggs along with 2 tablespoons of water to a second dish and whisk to combine.
Add the panko, bread crumbs, garlic powder, onion powder, and salt to a third dish and stir to combine.
Coat each piece of salmon first in the flour mixture, then the egg, and then the bread crumbs, making sure the bread crumbs adhere to the salmon.
Spritz or brush an air fryer basket with oil and arrange the salmon nuggets in a single layer. Spritz the salmon liberally with oil.
Air fry at 400 degrees for 8-9 minutes, flipping halfway through cooking and spritzing again with oil.
While the salmon is cooking, whisk together the mayo and sriracha to make a dipping sauce.
Sprinkle the salmon nuggets with dill and serve with dipping sauce.

Notes
Cajun seasoning adds a little spice to these nuggets, if you’d prefer that to the Old Bay.
Tartar sauce also makes a great dip.
