Prepare the tartar sauce by combining all of the ingredients in a small bowl. Cover and chill in the fridge until ready to put on the sandwiches.
Preheat the air fryer to 350 degrees Fahrenheit. Brush the basket with oil.
Prepare the fish fillets by cutting them into 4-ounce pieces a bit larger than your bun.
Pour the buttermilk into a shallow dish.
In a separate shallow bowl, combine the panko breadcrumbs, old bay seasoning, salt, and paprika.
Dip each fillet into the buttermilk and then into the breadcrumb mix, flipping to coat each side.
Place the fillets into the air fryer basket, spritz with oil, and cook for 4-5 minutes.
Flip the fillet and cook for an additional 4-5 minutes, or until they are crispy and golden.
Assemble the fish sandwiches by spreading the desired amount of tartar sauce on one of the brioche buns, place the fish on top, followed by your desired toppings, and the other half of the bun.

You can use store bought tartar sauce or any other condiments you want. We just love our homemade sauce.The fish can be substituted for any white fish.We like to top our sandwiches with loads of pickles, but lettuce and tomato are also delicious.
