Tender and flavorful, these carrots are ready in less than 15 minutes! The honey and spices make these sweet with just a hint of smoky spice. Don't be too worried about the cayenne here - it doesn't make these spicy, just deepens the flavor and contrasts the sweetness. You can definitely leave it out if you're very sensitive to spice though.
1poundcarrotspeeled and sliced on the diagonal into 1/2-inch thick slices

1tablespoonhoney
1/2teaspoonsalt
1/4teaspoonblack pepper
1/8teaspooncinnamon
1/8teaspooncumin
1/8teaspoonpaprika
pinchof cayenne pepper
1teaspoonminced fresh parsley
Instructions
Toss together the carrot, oil, honey, salt, black pepper, cinnamon, cumin, paprika, and cayenne pepper in a large bowl.
Lightly brush a little olive oil on the air fryer rack. Spread the carrots out in a single layer on the air fryer rack. You may need to work in batches depending on the size of your air fryer.
Cook the carrots at 400F until tender and golden in spots, about 7 to 9 minutes.
Transfer the carrots to a serving bowl and sprinkle with parsley before serving.
Notes
This recipe was made in an Instant Vortex 6 Quart Air Fryer. It will work in any air fryer, but cooking times may vary. Just cook until the carrots are fork tender.We like to cut the carrots on a diagonal, so that you have bigger pieces of carrot that aren't super thick. They cook nicely this way, but you can also cut them into rounds or sticks. Just adjust the cook time as needed based on the size of the carrots.
