Chop the chicken into bite sized pieces and set aside.
Add the pickle juice, milk, and eggs to a large mixing bowl and whisk to combine.
Add the chicken to the liquid and place in the fridge, covered, for 30 minutes.
While the chicken is marinating, add the breadcrumbs to a blender or food processor and process until finely ground.
Add the breadcrumbs, flour, sugar, salt, and spices to a large zip top bag and stir to combine.
Use a slotted spoon to remove the chicken from the marinade and add it to the zip top bag. Seal and smush the chicken around to coat in the breading.
Spritz your air fryer basket with oil spray and arrange chicken in a single layer in the basket, with space between for air to flow. Liberally spritz the chicken with oil spray.
Air fry at 370 for degrees for 10 minutes, shaking the basket and spritzing liberally with additional oil halfway through cooking.
Notes
There is some debate about whether or not Chick-Fil-A marinated their chicken in pickle juice. We like the way it tenderizes the meat and seasons it, so we do add pickle juice. You can leave it out if you prefer.Powdered sugar may seem like an odd ingredient for chicken, but it does add that subtle sweetness that CFA nuggets have. You may skip this if you're trying to cut back on sugar. Be sure to liberally spray the chicken with oil before and during cooking to really mimic that Chick-Fil-A breading. The breading will come out fairly dry otherwise. We use an oil mister filled with olive oil - still healthier than deep frying!
