These peach cobbler egg rolls cook in just 7 minutes, making peach cobbler so much quicker and easier to serve up! These are fun to dip in a vanilla glaze or caramel sauce, but they're perfectly tasty on their own too.
15ouncescanned diced peaches in syrup or juicedrained
2tablespoonsbrown sugar
1teaspoonlemon juice
1tablespooncornstarch
1teaspooncinnamon
Pinchof salt
10egg roll wrappers
Oil spray
Powdered sugarfor garnish
Instructions
Drain the peaches well and place in a mixing bowl.
Add the brown sugar, lemon juice, cornstarch, cinnamon, and salt to the peaches and stir well to coat.
Use a slotted spoon to spoon 2-3 tablespoons of the peach mixture into an egg roll wrapper. Fold in each side and then roll up tightly. Before making the last roll, dip your finger in water and brush it on the top corner of the egg roll and finish rolling to seal the egg rolls closed. Repeat with the remaining egg rolls.
Lightly spritz the egg rolls on each side with oil spray.
Place egg rolls in an air fryer basket in an even layer leaving space for air to flow between each egg roll. You will likely need to work in 2-3 batches, depending on the size of your air fryer.
Cook at 390 degrees for 7 minutes or until golden brown on the outside, flipping halfway through cooking.
Sprinkle with powdered sugar after removing from the air fryer.
Notes
We like to dip these in a vanilla glaze when serving. To make glaze, whisk together ½ cup powdered sugar, 2 tablespoons cream or milk, and a splash of vanilla. Add additional cream or milk to reach the consistency you desire. Be sure to use a slotted spoon when spooning the peaches into the egg rolls or drain off any excess liquid after mixing with the sugar to prevent the peach mixture from being too wet. If the mixture is too wet, the egg roll wrappers won’t hold up well and the filling will leak out.
