These air fryer Italian sausage sandwiches are perfect for game day or a quick, casual dinner. The sausage cooks perfectly in the air fryer while you saute veggies to top the sandwiches with.
Heat a skillet over medium heat and add the butter. Once melted, add the peppers and onions to the skillet and cook until softened, stirring occasionally, for about 5-10 minutes.
Add the marinara to the skillet and turn the heat to low. Cook until the marinara has warmed through, 2-3 minutes.
While the vegetables are cooking, place Italian sausages in a single layer in your air fryer basket, leaving space between each for air to flow.
Air fry at 360 degrees for 10-12 minutes, or until sausages are cooked through and have reached an internal temperature of 160 degrees, shaking the basket gently halfway through cooking. Do not overcook or sausages will shrivel up.
Place each sausage into a sausage roll and spoon the pepper and onion mixture over the top. Sprinkle with cheese and serve hot.

Any variety of Italian sausage will work here. We usually go for spicy Italian sausage, but mild or sweet Italian sausage cooks just the same.We always use Rao's marinara. It has the best flavor of jarred sauce that we've tried. It can be a bit spendy, but Costco seems to have it for the best price in our area.For a low carb version, use a low carb hot dog bun, easily found in most grocery stores in the US, or skip the bun altogether and eat these with a fork. Be sure to use a marinara with no sugar added, such as Rao's. With no bun, these will clock in at around 5 net carbs each.
