Our crispy on the outside, creamy on the inside Avocado Egg Rolls are made in the air fryer to keep things super simple! These are loaded with fresh avocado, zippy sun-dried tomato, and red onions, all dipped in a homemade chipotle ranch dressing! If you love the egg rolls from the Cheesecake factory, you're going to want to try these!
⅓cupchopped sun-dried tomatoespacked in oil and drained
¼cupminced red onion
¼cupchopped cilantro
1teaspoonsalt
½teaspooncracked pepper
8-10egg roll wrappers
Oil spray
For the dipping sauce:
¼cupsour cream
¼cupmayonnaise
½limejuice of
1chipotle pepper in adobo sauce
1clovegarlic
2teaspoonsdried parsley
1teaspoondried dill
1teaspoononion powder
1teaspoondried chives
½teaspoonsaltmore to taste
Milkas needed to reach desired consistency
Instructions
To make the egg rolls:
Dice the avocado and add to a mixing bowl with the lime juice, sun-dried tomatoes, red onion, cilantro, salt, and pepper.
Stir well to combine, mashing the avocado a bit as you stir, but still leaving the mixture chunky.
Spoon around 1/4 cup of the avocado mixture into an egg roll wrapper. Fold the bottom of the wrapper up to cover the filling and then fold in each side and roll up tightly. Before making the last roll, dip your finger in water and brush it on the top corner of the egg roll and finish rolling to seal the egg rolls closed. Repeat with the remaining egg rolls. Lightly spritz the egg rolls on each side with oil spray.
Place egg rolls in an air fryer basket in an even layer leaving space for air to flow between each egg roll. You will likely need to work in 2 batches, depending on the size of your air fryer.
Cook at 390 degrees for 7-9 minutes or until golden brown on the outside, flipping halfway through cooking.
Serve hot with dipping sauce.
To make the dipping sauce:
Add the sour cream, mayonnaise, and lime juice to a small bowl and whisk to combine.
Finely mince the chipotle pepper and garlic. Add to the sour cream mixture.
Whisk in the remaining seasonings to combine. Taste and add additional salt, lime juice, or minced chipotle peppers to suit your tastes. Add a splash of milk to thin the dip out, if desired.
Notes
Every air fryer cooks differently. Ours took about 9 minutes for the egg rolls to get golden brown and crispy, but keep an eye on them around the 6-7 minute mark and pull them when done.Chipotle peppers are sold in a can in a spicy, flavorful sauce called adobo sauce. The sauce will cling to the pepper as you mince it up. Add additional sauce to the dip if you’d like more of that flavor.You'll get around 8 egg rolls, depending on the size of your avocados and how much filling you add to each wrapper.
