Our crispy on the outside, creamy on the inside Avocado Egg Rolls are made in the air fryer to keep things super simple! These are loaded with fresh avocado, zippy sun-dried tomato, and red onions, all dipped in a homemade chipotle ranch dressing! It’s no secret that we love air fryer egg roll recipes! We’ve got a bunch of them, ranging from the classic sausage egg rolls to the more creative cheesesteak egg rolls and southwest egg rolls.
I’m pretty obsessed with Cheesecake Factory’s avocado egg rolls so it was only a matter of time before we tried our hand at crispy egg rolls filled with creamy avocado and I’m happy to say that these turned out perfect!
While the filling is very much like the Cheesecake Factory recipe, we went a different route on the dipping sauce. I love their tamarind cashew dipping sauce with my whole heart, but sourcing the ingredients for that got a little pricey and a little tricky. I didn’t want you guys to get frustrated so we tried out a few other options and settled on this chipotle ranch dipping sauce.
These avocado egg rolls are perfectly crispy on the outside with a creamy, flavorful avocado filling. They’re a great vegetarian option for lunch or a delicious snack!

For the egg rolls:
Avocado – You’ll need 3 medium, fresh avocados for this recipe. See below for some tips on how to choose perfectly ripe avocados!
Sun Dried Tomatoes – Look for the sun-dried tomatoes that are packed in oil. They’ve got so much wonderful tomato flavor that’ll taste great with the avocado and other ingredients.
Red Onion – We add minced red onion for a bit of crunch and flavor.
Egg Roll Wrappers – You can find these at the grocery store in the refrigerated section. They’re often with the vegan foods. You’ll need at least eight egg roll wrappers for this recipe!
Lime Juice – Freshly squeezed lime juice is best, but bottled will be fine as well.
Other – A few other ingredients you’ll need are salt, cracked black pepper, chopped cilantro, and some avocado spray or olive oil spray for air frying!
For the chipotle ranch dipping sauce:

Mayo & Sour Cream – This creamy sauce starts with a combination of mayonnaise and sour cream! Any brand you’d like to use here is fine.
Chipotle Pepper – Look for the canned chipotle peppers in adobo sauce. They add spicy heat but also lots of flavor! That adobo sauce the peppers are packed in is a flavor bomb.
Milk – I add just a splash of milk to help thin the dip out, if necessary. You can use more or less or none at all to make the consistency of the dipping sauce however you’d like.
Herbs & Seasoning – You’ll also need some minced garlic, dried parsley, dried dill, dried chives, onion powder, and salt for seasoning the dipping sauce!
This is a great recipe for those following a vegetarian diet! We love all the strong flavors in these avocado egg rolls, and the creamy avocado is a healthy and nutritious source of fat and protein. The creamy, spicy dipping sauce is also pretty wonderful and you can use it as a homemade dipping sauce in other recipes too!
How to Tell if Avocado is Ripe:
Follow these tips to select perfect avocados at the supermarket!
- Squeeze: The simplest indicator is to just squeeze the fruit. If it yields slightly to the pressure and isn’t as hard as a rock that’s a good sign!
- Color: You can judge the ripeness of an avocado by color too! An unripe avocado will be bright green. A ripe avocado should be a darker green, just not brown and mushy!
- Stem: Pop the little bit of stem off the avocado. If it gives easily and the color inside is a nice green, your avocado should be ripe! If it’s brown, it’s overripe. If it’s yellow, it’s not ripe enough.
- Ripen Quickly: If you’ve got avocados that need ripened quickly the best way is to store them in a sealed brown paper bag along with another fruit like a banana or an apple. It’s a simple way to quicken the ripening process!
How to Make Avocado Egg Rolls:

To begin preparing the avocado egg roll filling dice up the fresh ripe avocado and add it to a medium bowl with the lime juice, sun-dried tomatoes, red onion, fresh cilantro, salt, and pepper! Stir all that up until well combined. You’ll want to mash the avocado a bit while stirring up not completely, the mixture should still be chunky.

Spoon around 1/4 cup of the mixture into the center of an egg roll wrapper.

Fold the bottom of the wrapper up to mostly cover the filling.

Fold in the sides. Your egg roll will look a bit like an envelope at this point.

Roll the egg roll up, stopping just before you close it. Use your finger to brush the edge with water and then finish sealing your egg roll.

Spritz the egg rolls with oil spray, place in the air fryer, and cook at 390 degrees for 7-9 minutes. The egg rolls should be browned and crispy on the outside. You may need to work in batches – don’t overcrowd your air fryer.

Recipe Tips!
Every air fryer cooks a little differently! Ours took about 9 minutes for the egg rolls to get golden brown and crispy, but that may not be the case with your air fryer. Be sure to check them around the 6 to 7 minute mark, and flipping them halfway through will also help them cook evenly.
