Preheat the air fryer to 330 degrees. Spray 2 6x3 mini loaf pans with non-stick spray.
In a small bowl, combine the flour, cinnamon, baking powder, baking soda, and salt. Set aside.
In a second bowl, cream together the butter and sugars with an electric mixer until light and fluffy. Beat in the eggs and vanilla until combined. Mix in the mashed bananas.
Slowly add the dry ingredients (and nuts, if using) to the wet ingredients and stir until just combined.
Pour the batter evenly between the prepared loaf pans. Add the loaf pans to the air fryer basket.
Air fry for 10 minutes and then carefully lay a piece of foil over the top of the loaf pans to prevent the loaves from browning too much. Continue baking for 15-20 more minutes, until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes and then move to a wire rack to finish cooling before slicing.
Notes
I measure out a piece of foil the size of my air fryer basket and just carefully lay it directly over the top of the loaf pans. It does tend to bunch up a bit after opening the air fryer to test for doneness, but just flatten it back out and place it back on top as needed.You’ll want somewhere around ½ - ⅔ cup of mashed banana. Feel free to swap the nuts for chocolate chips, if you prefer.
