These Air Fryer Falafel Bowls feature crispy, golden falafel topped over rice with tomatoes, olives, veggies, tzatziki, herbs, and spices! They taste like your favorite Mediterranean restaurant but come together in your own kitchen in 30 minutes. An easy meatless option!

Add the chickpeas, parsley, cilantro, garlic, salt, cumin, and cayenne to a food processor fitted with the blade attachment.
Pulse until well combined and the mixture is coarse. Do not overmix or things will get pasty.
Use a large cookie scoop to scoop out the mixture into 12 balls.
Spritz the air fryer basket with oil spray. Arrange the falafel in an even layer in the basket. Spritz the falafel with oil.
Air fry at 370 degrees for 13 minutes.
To make the bowls:
Divide the rice between four bowls.
Top each bowl with 3 falafel, the mini cucumbers, tomatoes, parsley, olives, and red onion.
Add hummus and tzatziki to each bowl and sprinkle it all with crumbled feta cheese.
Serve immediately.

We prefer white rice here, but any grain you like as the base of your bowl will work well. Quinoa, brown rice, or couscous would work well. Keep it lower in carbs by using cauliflower rice.Feel free to mix and match toppings to suit your taste. We usually set out bowls of the toppings and let everyone build their own bowls.Campari tomatoes, also sold as cocktail tomatoes, are some of my favorite tomatoes to buy at the grocery store. They aren’t mealy, are super juicy and sweet, and just taste great year round. These can be swapped for cherry tomatoes if that’s what you have on hand.I’m a big fan of Cava and always add their fiery broccoli to my bowl. If I have the time, I love to make something similar at home by roasting up some broccoli (use our air fryer broccoli) that’s seasoned with a bit of salt, smoked paprika, and chipotle chili powder. I mince it up after roasting and give it a little squeeze of lemon juice before serving. Easy way to up the veg in this bowl!
