One bowl, no mixer, cooks in 5 minutes! These thick, chewy, bakery-style oatmeal cookies are made in the air fryer and it couldn't be easier. Perfect for a bedtime treat.
Place the butter in a medium sized mixing bowl. Microwave to melt the butter.
Add the brown sugar, sugar, yolk, and vanilla to the melted butter and stir well with a fork to combine.
Once combined, stir in the flour, baking soda, baking powder, salt, and cinnamon. Once combined, stir in the oats and chocolate chips or raisins.
Form the cookie dough into 2 balls and flatten lightly.
Place the cookie dough on a sheet of air fryer parchment paper, leaving space between each cookie and the edges of the air fryer basket. Place in your preheated air fryer. Air fry for 5 minutes. The outside should be browned and the inside will be underdone. It will finish baking as it cools.
Remove the basket from the air fryer, but leave the cookie in the basket. Immediately press a few extra chocolate chips or raisins on top of the cookie, if desired.
Let cool for at least 20 minutes before handling or the cookie will fall apart. If you like your cookie to be less gooey, cool for a couple of hours.

These bake up very gooey. They’re meant to be underdone, because that’s how I like my cookies. If you want them more baked in the center, you can add an extra minute of bake time, but they will get more browned on the outside. The longer they cool, the more firm they will be.If your parchment paper curls up a bit and misshapes the cookie as it bakes, take a bowl that’s just a bit wider than the cookie and place it directly over the cookie immediately after removing the air fryer basket from the air fryer. Swirl the bowl around a bit in a circle to reshape the cookie into a perfect circle. Press a few extra chocolate chips into the top, if you like. Makes it look bakery perfect!
