Believe it or not, the air fryer is a great tool for cooking filet mignon! The edges get a nice char around them and the steak cooks perfectly and turns out so moist.
Rub the steaks with the olive oil and season all sides with the salt and pepper.
Let steak rest for 30 minutes at room temperature after seasoning.
While the steak is resting, add the butter to a small bowl. Use a microplane grater to grate the garlic into the butter. Alternately, use a sharp knife to finely mince and then paste the garlic before adding to the butter.
Add the parsley, rosemary, and salt to the butter and use a fork to mash everything together until well combined.
Transfer the butter to a small piece of parchment paper and roll into a small log. Refrigerate until ready to use.
Once steaks have rested, preheat the air fryer to 400 degrees. Add the steaks to the basket and air fry until filets reach the desired doneness. See notes section below for timing.
Remove the steak from the basket and let rest for 5 minutes before topping with pats of butter and serving.

Seasoning: We like to keep it simple with salt and pepper for filet mignon so that the flavor of the beef shines through. You could use any steak seasoning that you like. Montreal Steak Seasoning is very popular.Timing: For rare steak (125F), cook for 9-10 minutes. For medium rare (135F), cook for 11-12 minutes. For medium (145F), cook for 12-13 minutes. For medium well (150F), cook for 13-14 minutes. For well done (160F), cook for 14-15 minutes. For the most accurate results, use a meat thermometer to check the internal temperature of the steak. Temperature will continue to rise about 5 degrees as the steak rests.
