Scotch eggs have never been easier to make now that we can make them in an air fryer. Paired with this mustard sauce this is a recipe you are sure to try again and again!
Add the sausage, Parmesan, and onion powder to a mixing bowl and mix well to combine.
Wrap each egg in the sausage mixture to fully enclose the egg.
Place in a single layer in an air fryer basket. Spritz with oil spray.
Air fry at 390 degrees for 12 minutes, flipping halfway through. Check for doneness and continue cooking, if necessary, until sausage is cooked through.
To make the dip, whisk all of the ingredients together.
Slice eggs in half and serve with the mustard dip.
