These Air Fryer Chicken Bites are about to become your new weeknight staple. Tender, juicy chicken pieces with a perfectly seasoned crust, ready in just 15 minutes with one bowl and a handful of pantry spices. Perfect in a bowl, over salad, or just with a side of veggies or fries.

I’ve been making these chicken bites on repeat, and I’m not exaggerating when I say they show up in our dinner rotation at least twice a week. They started as a simple ‘I need dinner on the table fast’ solution, and now I’m finding alllll the ways to incorporate them.
They’re delicious over a salad, they make a great protein in a rice bowl, and they’re a favorite for dipping in a variety of sauces alongside some fries or fresh veggies.
I’m sharing my ‘basic’ version here with a mix of smoked paprika and garlic powder. It’s the house favorite. But, don’t feel llimited – these work well with just about any seasoning mix. Storebought or homemade – both will work great!

Ready in 15 minutes. From cold chicken to dinner on the table, you’re looking at about 15 minutes total. That’s hard to beat on a school night when everyone is hungry and patience is running thin.
Endlessly versatile. Serve them over rice, tuck them into wraps, pile them into a bowl with roasted veggies, or just set out a few dipping sauces. These chicken bites work with almost anything you have going on the side.
Barely any cleanup. One mixing bowl, one air fryer basket. That’s genuinely it. I can get this whole dinner on the table and have the kitchen clean before anyone finishes their plate.
Ingredients

Boneless, skinless chicken breasts. I cut mine into roughly 1-inch pieces so they cook evenly and get done in that quick 8-minute window. Chicken thighs work here too if you prefer dark meat with a little more richness.
Olive oil. Just a small drizzle to help the seasoning stick and encourage a little color on the outside. Avocado oil works fine too.
Smoked paprika. This is the flavor backbone of the whole blend. Make sure it’s smoked, not sweet. The smoky depth is what makes these taste like more than just plain chicken.
Garlic powder and onion powder. These two work together to give the chicken that savory base flavor. I reach for these in almost every chicken recipe I make.
Brown sugar. Just one teaspoon, but it makes a difference. It helps with caramelization in the air fryer and balances the smokiness from the paprika. Don’t skip it.
Salt and cracked pepper. Nothing fancy here. I use regular kosher salt and freshly cracked pepper.
Step by Step:

While your air fryer preheats to 400 degrees, chop the chicken into bite-sized pieces.

Drizzle the chicken with oil and sprinkle on the seasonings. Toss to coat the chicken evenly in the spices.

Cook the chicken for 400 degrees for 8 minutes, shaking the basket gently halfway through cooking.

Pull the chicken when it reaches 165 degrees F internally. Let rest for a couple of minutes before digging in.
Serving Ideas
These are a great protein base for almost any meal. Here are a few favorite ways I’ve been serving these up:
Rice Bowls: A pile of white or brown rice, some roasted veggies, and a bunch of air fryer chicken bites. Drizzle a little spicy mayo over the top (mayo + sriracha, to taste).
Chicken Bacon Ranch Salad: Fresh greens, crispy bacon, shredded cheddar, chicken bites, and a bit drizzle of homemade ranch. Toss it altogether and watch your family devour their salad.
Wraps: I’m super into Chicken Caeasar wraps these days. I buy a bag of Caesar salad mix, crush the croutons into crumbs, add it to a bowl with the chicken bites and dressing, stir in some extra shaved Parm and wrap it in a large tortilla. Serve this with some air fryer frozen french fries and it’s my dream dinner.
The Classic: This is the type of meal I grew up eating – a protein, a veg, and a carb. My family loves these chicken bites with a baked potato and some green beans. Serve with your favorite dipping sauce.
Recipe Tips!
I’ve learned that leaving space between the pieces in the basket is worth doing an extra batch. When I crowd them in, they steam instead of getting those crispy edges. Two rounds of a few minutes each beats one crowded batch every time. Of course, if you’re short on time…whatever works.
For seasoning swaps, I’ve had great luck with taco seasoning, a store-bought BBQ dry rub, or lemon pepper. This recipe is forgiving and the cooking method stays the same no matter what blend you use.
If you’re using chicken thighs instead of breasts, just watch the temp. It’ll be more tender if you cook it to 170-175 instead of 165.
