Air Fryer Pita Chips are warm, crispy, and ready in about 5 minutes, and once you make them at home you’ll have a hard time going back to the bag. Love these with hummus or as a side to a Mediterranean style bowl.

These started as a Cava copycat for me. I kept ordering the pita chips at Cava and thinking, I can make these at home. Turns out, I was right.

Cava’s version is just salt and pepper on the pita, which is delicious, but there are so many ways to season these. I’ve also been making Air Fryer Tortilla Chips for years, and the pita version has the same ease with a totally different texture.

My favorite way to use these is as a scoop alongside Air Fryer Greek Chicken Bowls. The chips hold up well and make the whole bowl more fun to eat.

They’re also great with a bowl of hummus or tzatziki on the side when you need a quick snack that feels a little more substantial than crackers.

3 Reasons You’ll Love This Recipe

Done in 5 minutes. From slicing the pita to pulling the chips out of the air fryer, this is about as fast as a snack gets. There’s no oven to preheat, no oil to heat up, nothing complicated.

You control the seasoning. The base recipe uses garlic salt and pepper, but you can go in any direction you want. Ranch, za’atar, everything bagel, smoked paprika, cinnamon sugar for a sweet version. The pita is a blank canvas.

Better than the bag. Store-bought pita chips are fine, but homemade ones come out warm with a fresh crunch that you just can’t replicate from a bag. They’re also cheaper when you make them yourself.

Ingredient Notes

Ingredients for air fryer pita chips are arranged on a white countertop.

Pita bread is all you need for the base. Different brands cook a little differently, some brown faster and some take the full 5 minutes, so keep an eye on them. Standard white pita is what I use most often, but whole wheat pita works well too and gives the chips a slightly nuttier flavor.

Olive oil is what helps the seasoning stick and gives the chips their color. A light drizzle is all you need. Don’t overdo it or the chips will be greasy rather than crispy.

Garlic salt is the primary seasoning here and it does a lot of work. It’s salty and savory without needing much else.

Seasoning swaps are where this recipe gets fun. Ranch seasoning mix is a family favorite in our house. Za’atar is a natural fit given the Middle Eastern origin of the pita. Everything bagel seasoning is another go-to. For a sweet version, skip the savory seasoning and toss with a little cinnamon and sugar instead. If you are trying to copycat the popular restaurant Cava, skip the garlic salt and just use plain salt and cracked pepper.

Step by Step

A pizza cutter resting next to a sliced pita cut into triangles.

Cut each pita into 8 triangles. I use a pizza cutter or a sharp knife for this.

Pita triangles in a clear glass bowl with olive oil being drizzled on them.

Add the pitas to a bowl, drizzle with oil, and season. Use your hands to toss everything together to coat the pita chips in the seasoning.

Arrange the pita chips in the ai fryer basket. A single layer will result in crispier chips, but I generally just pile them in and get a mix of crisp and chewy.

Cooked air fryer pita chips stacked in a basket, surrounded by bowls of seasonings and dips.

Air fry at 330 degrees for 4-5 minutes, until the pita chips are as browned and crunchy as you’d like.

Serving Ideas

Hummus is the classic pairing and for good reason. The warm chips scoop up hummus better than anything cold from a bag. Tzatziki is another natural match if you want something lighter and more herby.

Serve these alongside Greek chicken bowls and use the chips as a scoop as you eat. It’s a small thing but it makes the whole meal more fun and the chips add a nice crunch to every bite.

For a snack board, pile these alongside olives, feta, fresh vegetables, and a couple of dips. They fill the same role as crackers but feel a little more interesting.

Storage

Pita chips are best the day they’re made when they’re at their crispiest. Store any leftovers in an airtight container at room temperature for up to 2 days.

If they soften up, pop them back in the air fryer at 330 degrees for 1 to 2 minutes to bring the crunch back. Don’t refrigerate them as the moisture will make them chewy rather than crispy.

Notes

If you want your pita chips to be extra crisp, work in batches while air frying, arranging the pita chips in a single layer rather than piling them on top of each other. I like the crispy/chewy bits and prefer these just piled in the basket.
I’ve made these with a variety of seasonings. Cava just uses a simple mix of salt and pepper (delish!) and we also love these with ranch seasoning.
I like to serve these with hummus or tzatziki for dipping, but they also make a great side with our Greek chicken bowls. I like to use the chips as a scoop for eating my bowl.
I’ve found that different brands of pitas cook a bit differently, so like many things in the air fryer, you’ll want to keep an eye on these. Keep an eye on them as you shake the basket to check for browning and crispness and pull them when the chips are how you want them.
