Air Fryer Blackberry Cobbler

When blackberries are juicy and ripe, it’s just too hot to turn on the oven! You’re going to love this Air Fryer Blackberry Cobbler. It’s warm, bubbly and perfectly portioned with a golden biscuit topping and jammy berry filling, and it comes together in about 20 minutes start to finish.

I’ve been making fruit desserts in the air fryer for a while now, and this one has quickly become a favorite around our house. We’ve done Peach Cobbler Egg Rolls (a must try!) and Air Fryer Apple Galette for a more rustic dessert night, but there’s something about individual cobblers served warm with a scoop of vanilla ice cream that just feels like summer.

These are perfect with farm fres berries, grocery store berries, and yes – even frozen berries! Expect your family to be basically standing over the air fryer waiting for these to come out. The topping bakes up golden and slightly crisp on the edges while the berries underneath get thick and jammy.

Every air fryer is a little different, so check them at 10 minutes and go from there. You’re looking for a browned top and bubbling edges.

3 Reasons You’ll Love This Recipe

Individual servings, no slicing. Everyone gets their own ramekin, which means perfect portions and no fighting over who got the best scoop. It also makes the presentation really nice for guests.

Fresh or frozen berries both work. No need to thaw if you’re starting from frozen. This is the kind of recipe you can make any time of year, not just when blackberries are in season.

Done in under 20 minutes. A traditional oven cobbler takes close to an hour. The air fryer gets this on the table in a fraction of the time without sacrificing any of the texture or flavor.

Blackberries are the star here, but this recipe is flexible for your fruit choice. Blueberries, raspberries, sliced peaches, or a mix of berries all work well with the same filling ratios. If your choice of berries are particularly tart, add an extra teaspoon of brown sugar.

Brown sugar adds a subtle molasses depth to the filling that plain white sugar doesn’t. It pairs really nicely with the blackberries.

Cornstarch thickens the berry juices as they cook so you get a jammy filling instead of a watery one. Don’t skip it. Just the small amount called for makes a big difference.

Cold butter is essential for the biscuit topping. Cold butter creates the crumbly, flaky texture you want. Cut it into small cubes and keep it in the fridge until the moment you need it. If the butter gets warm, the topping will be dense rather than light.

Vanilla ice cream for serving is listed as optional in the recipe, but I’m going to go ahead and say it’s required. The contrast of cold ice cream melting into warm cobbler is the whole point.

Step by Step:

Add the filling ingredients to a mixing bowl and stir gently to combine it all. Divide the mixture between 6 ramekins.

Combien the flour, sugar, and baking powder in a bowl and use a fork or pastry cutter to cut in the butter. You’ll end up with coarse crumbs. Add hot water and stir to form a dough.

Use your hands to crumble dough evenly over each ramekin. You don’t need to fully cover the berries here.

Cook in a preheated air fryer for 13-15 minutes, just until the berries are bubbky and the top is golden brown.

Serving Ideas

Vanilla ice cream is the classic pairing and for good reason. The cold creaminess against the warm, jammy cobbler is hard to beat. A dollop of fresh whipped cream works beautifully too if you want something lighter.

These are great as a dinner party dessert since everyone gets their own individual serving. Make the ramekins ahead of time, keep them in the fridge, and air fry them right before you’re ready to serve.

For a breakfast twist, skip the ice cream and serve with a spoonful of Greek yogurt. The tartness pairs well with the sweet berry filling.

Ingredients
  

For the filling:

  • 2 ½ cups blackberries fresh or frozen
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cornstarch
  • ¼ teaspoon ground cinnamon
  • Pinch of salt

For the topping:

  • ½ cup flour
  • 3 tablespoons sugar
  • 1/4 teaspoon baking powder
  • 3 tablespoons cold butter cut into small cubes
  • 1 ½ tablespoons very hot water

Instructions
 

To make the filling:

  • Add the blackberries, sugar, cornstarch, cinnamon, and salt to a mixing bowl and stir gently to coat the berries in the sugar and spices.
  • Divide the berries evenly between 4 6-ounce ramekins.

To make the topping:

  • Add the flour, sugar, and baking powder to a small bowl and stir to combine.
  • Add the cubed butter to the bowl and use a fork or pastry cutter to cut the butter into the flour mixture, forming coarse crumbs. Add the hot water and stir to form a thick dough.
  • Use your hands to crumble the dough evenly over the top of each ramekin.

To cook:

  • Preheat the air fryer to 330 degrees for 5 minutes.
  • Place the ramekins in the air fryer and cook for 13-15 minutes, checking at the 10 minute mark to make sure they aren’t browning too quickly. If the top is getting too brown, cover loosely with foil and continue cooking.
  • Serve with a scoop of vanilla ice cream on top, if desired.

Notes

Every air fryer cooks differently and you’re really just going for a golden brown top with bubbly juices. Adjust the time as needed to get a browned topping with bubbly filling.
You can use fresh or frozen blackberries here. If you start with frozen, no need to let them thaw first.
Store, covered, in the fridge for up to 4 days. Reheat in the microwave or air fryer, if you prefer this served warm.
