These air fryer vegetable side dishes are the easiest way to get perfectly roasty toasty veggies on the table in 15 minutes or less, and they might just turn the whole family into vegetable fans.

Air fryer vegetable side dishes have completely changed how our family eats dinner. What used to be a battle to get anyone to eat their veggies has turned into people actually going back for seconds, and the air fryer is the reason.

Steaming and boiling have nothing on the air fryer when it comes to vegetables. The hot circulating air gets you caramelized, blistered edges and a tender inside in less time than preheating the oven. No mushy texture, no sad soggy sides. Just vegetables that actually taste good.

Broccoli used to get quietly pushed to the side at our dinner table. Once I started roasting it in the air fryer, that changed fast. The same thing happened with vegetables I thought our family would never get excited about. There’s something about those caramelized edges that makes all the difference.
