You will love air fryer shrimp fajitas.  They are easy to make, have a good texture, and are full of savory flavor.These shrimp fajitas are full of flavor and have a great texture straight from our air fryer!The air fryer is a great way to bring together all the ingredients of a shrimp fajita and cook them together!Get lots of flavor with your shrimp by using your air fryer to make shrimp fajitas!


These Air Fryer Shrimp Fajitas cook in just 15 minutes for a quick Mexican dinner that’s perfect for busy weeknights!

We’re combining two of our favorites in one here – the air fryer and Mexican food!

I don’t know about you, but I could eat Mexican just about every night of the week and fajitas are a definite favorite of mine!

I love how easy it is to cook shrimp fajitas in the air fryer without sacrificing a bit of flavor! And, because it’s so quick, we had time to whip up our own seasoning blend (so easy!) for these fajitas!

Whether you choose to serve these on tortillas or over a bowl of rice (or cauliflower rice!), these are a delicious dinner that the family will just love!

Ingredient Notes:

Shrimp fajita ingredients spread out on a countertop.

Shrimp – We’re using fully cooked frozen shrimp, peeled, deveined, and tails off. Thaw the shrimp before cooking.

Veggies –We use a mix of peppers (red and green), but use any color you like. You’ll also need onion.

Seasonings– You could use a packet, but our seasoning blend is so easy! You’ll need chili powder, cumin, sugar, garlic powder, onion powder, salt, and cayenne.

How to Make Shrimp Fajitas in the Air Fryer:

Season EVERYTHING!– Grab a medium or large bowl and place your thawed shrimp into it. Slice your peppers and your onion into strips and add them to a second bowl. Drizzle oil over the shrimp and the veggies. In a different small bowl, add all of your seasonings together and stir them to combine. Finally, sprinkle the spices over the shrimp and veggies and stir both to coat the ingredients.

Cook the veggies first– Brush oil onto your air fryer basket or you can spritz oil into the basket. Dump your veggies into the air fryer and cook for 10 minutes at 390 degrees F. You’ll want to shake the basket to stir the veggies around halfway through cooking.

Cook the shrimp – Now add your shrimp and shake the air fryer basket a bit to mix it all up. Cook for another 5 minutes – just enough to warm the shrimp and finish off the veggies.

Serve: We like to serve these on tortillas with a little sprinkle of cotija. See below for more serving suggestions.

Serving & Topping Ideas:

Serve your air fryer shrimp fajitas over charred tortillas (just lay them directly over an open flame for a few seconds to warm and char the edges), in a burrito bowl with rice or cauliflower rice, or over a bed of greens for a delicious Mexican salad.

We love to top our fajitas with sliced avocado or guacamole, crumbled cotija cheese, Mexican crema, salsa, and a squeeze of fresh lime.

FAQ:

How do I reheat the leftovers?

Air fry at 350 degrees for 5 minutes or until heated through.

Do I serve fajitas with a tortilla?

Yes, usually. You can serve them with corn or flour tortillas but flour is more common. If you are trying to stay on the lower-carb side, then you skip the tortilla for sure.

You should feel free to customize your fajita to your liking!

If you’re starting with raw shrimp, add it in with the veggies after they’ve cooked for 5 minutes and continue cooking for 10 minutes to ensure the shrimp is cooked through.

Equipment

  • Air Fryer

Ingredients
  

  • 1 pound frozen cooked shrimp peeled and deveined, tails removed, thawed
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 1 tablespoon oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne

Instructions
 

  • Place the thawed shrimp in a medium sized bowl.
  • Slice the peppers and onion into strips and add to a second bowl.
  • Drizzle half the oil over the shrimp and half over the vegetables. 
  • Add all of the seasonings to a small bowl and stir to combine.
  • Sprinkle the spice blend evenly over the bowl of shrimp and the bowl of vegetables. Stir well to coat. 
  • Dump the vegetables into an oiled air fryer basket and cook at 390 degrees for 10 minutes, shaking the basket halfway through cooking.
  • Add the shrimp to the basket and continue cooking for 5 minutes.
  • Serve hot with tortillas and your favorite toppings.

If starting with raw shrimp, add the shrimp to the air fryer with the vegetables after 5 minutes. Let shrimp cook for 10 minutes to cook through.
