Air Fryer Ribeye Steak

This Air Fryer Ribeye Steak recipe will make your next steak dinner nice and easy! We use our famous steak marinade to add big flavor to these ribeyes and then toss them in the air fryer until they’re cooked to just the right temp. See our temp and time chart below so you can make the perfect ribeye in the air fryer too!

I know what you’re thinking. What kind of crazy person cooks an expensive cut of beef like a ribeye steak in an air fryer? The crazy smart kind, that’s who!

Air fried steak tastes just as good as grilled steak or steak that’s been seared in a skillet, and it’s easy to do!

We know this because we’ve already done it with our air fryer filet mignon, air fryer steak kabobs and air fryer steak bites with garlic butter sauce! All of those recipes are real winners, and so is this one!

My mom makes the perfect marinade for steaks and that’s what we use for these air fryer ribeyes. The marinade adds flavor all throughout each bite for maximum flavor, but if you’re short on time, you can easily just season the outside.

The air fryer does a great job of searing the steaks too so you don’t even need to finish them in a skillet. You’ll still want to follow the guide below to determine the level of doneness. Pretty soon you’ll be cooking all your steak dinners in the air fryer!

Ribeye Steaks – You’ll need two boneless ribeye steaks, each about 16 ounces and 1 inch thick. A good, juicy ribeye steak should be well marbled with streaks of fat throughout the meat. That fat is flavor and it’s what makes ribeye steaks so popular.

Marinade – This marinade is optional but we love the savory flavor it adds to the ribeye steak. To prepare it you’ll need hot water, kosher salt, oil, white vinegar, Worcestershire sauce, mustard, black pepper, hot sauce, oregano, and rosemary. Feel free to add any other fresh herbs like thyme, or other seasonings such as garlic powder or onion powder.

Butter – For serving! A pat of butter on the steak while it rests after cooking is a delicious way to dress up ribeyes. We also garnish with some fresh minced parsley.

We love how simple the air fryer makes this ribeye steak dinner! It’s quicker and easier than heating up a charcoal grill and the steak still gets a nice sear like you would from a skillet. Air frying is not the first method that comes to mind when preparing a steak but you’ll see the benefits once you’ve tried it!

How to Cook Steak in Air Fryer:

To begin you’ll mix together the marinade ingredients. Add the hot water and salt to a large ziptop bag or a large shallow dish. Stir to dissolve the salt into the water, then add the oil, vinegar, Worcestershire sauce, mustard, pepper, hot sauce, oregano, and rosemary. Stir all that together until the marinade is well combined.

Add the ribeye steaks to the marinade and turn to coat them well. Seal the bag or cover the dish and refrigerate for 4 to 8 hours. The longer the steak sits, the more flavor! It takes longer for a marinade to work into beef than it does chicken or pork so it needs a longer marinade time to get the maximum flavor.

About 30 minutes before cooking remove the steaks from the fridge and the from the marinade. Pat them dry and let them rest for 30 minutes so they can come to room temperature before cooking. This will help the steaks to cook faster and more evenly.

Preheat your air fryer to 400 degrees and spritz the basket with some oil spray. Arrange the steaks in a single layer, or cook separately if your basket can’t fit both steaks. Air fry for at least 5 to 6 minutes per side, flipping once halfway through. Follow the temperature guide below to reach your desired level of doneness.

How to Tell when Steaks are Done:

If you’re wondering how to tell when steaks in the air fryer are done, it’s no different than when you cook them via any other method. Just use a meat thermometer to determine the internal temperature! That’s really the only way to be sure without cutting into the meat.

Follow the guide below to get perfectly cooked air fried steak every time!

  • Rare: 120°–125° (10 minutes)
  • Medium Rare: 130°–135° (12 minutes)
  • Medium: 140°–145° (14 minutes) 
  • Medium Well: 150°–155° (16 minutes)
  • Well Done: 160°–165° (17 minutes)

The times are for cooking a 1 inch thick ribeye steak at 400 degrees in the air fryer. Your air fryer may cook differently than ours so these are just estimates. You should verify with a meat thermometer to cook your steak just the way you like.

Recipe Tips!

Don’t forget that your air fryer may not cook quite the same as a different model, even if both are set at the same temperature. The size of the basket and the air flow make a difference too so make sure to use that meat thermometer!

How to store leftover steak?

You can keep any leftover ribeye steak stored in an airtight container in the refrigerator for about 3-4 days. You can reheat it in the air fryer, microwave, or the oven.

Why rest the steaks?

Resting a steak after cooking is an important step that is often skipped. If you immediately cut into the steak all the juice will run out. By letting it rest for 5 to 10 minutes the juices will redistribute into the meat making for a more juicy steak when you cut into it. You’ll also want to let the steaks rest after removing them from the fridge so that they can reach room temperature before cooking. This helps them to cook faster and more evenly.

Can I use a different cut of steak?

You can air fry pretty much any cut of steak! Sirloin steaks, filets, New York strips, they’ll all taste great when air fried. They do cook at different rates though so just follow the temperature chart above and use a meat thermometer if you plan to cook something other than a ribeye steak!

Ingredients
  

  • 2 16 ounce boneless ribeye steaks about 1 inch thick
  • ¼ cup hot water
  • 1 tablespoon kosher salt
  • ¼ cup neutral oil
  • 2 tablespoons white vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon mustard
  • 2 teaspoons ground pepper
  • 1 teaspoon hot sauce
  • ½ teaspoon oregano
  • ½ teaspoon rosemary
  • 2 tablespoons butter
  • Fresh minced parsley for garnish

Instructions
 

  • Add the hot water and salt to a large ziptop bag or large shallow dish. Stir to dissolve the salt into the hot water.
  • Once the salt is mostly dissolved, add the oil, vinegar, worcestershire sauce, mustard, pepper, hot sauce, oregano, and rosemary to the mixture and stir to combine.
  • Add the steaks to the marinade and turn to coat. Seal the bag or cover the dish and refrigerate for 4-8 hours. The longer the steak sits, the more flavorful it will be.
  • Remove from the fridge about 30 minutes before cooking and remove the steaks from the marinade. Pat dry. Let steaks rest for 30 minutes to come to room temperature before cooking.
  • Preheat the air fryer to 400 degrees.
  • Spritz the basket with oil spray and arrange the steaks in a single layer. Air fry for 5-6 minutes per side, until the steaks reach your desired level of doneness. See blog post for information on cooking times and temperatures for rare through well done.
  • Remove steaks to a plate and tent with foil. Let rest for 5 minutes and then top with a pat of butter and sprinkle of parsley before serving.

Notes

Cooking times will vary depending on the thickness of your steak. This recipe was written using 1 inch thick ribeyes.
If you don’t have time to marinate the steak, you may skip this step and just season them liberally with your favorite seasoning blend.
If you’ll be leaving the steak in the marinade for longer than 8 hours, we’d recommend reducing the salt in the marinade. The longer it sits, the more salty it will get. We find the recipe is pretty perfect between 4-8 hours for our salt preferences.
