This Buffalo Chicken Grilled Cheese is loaded with saucy, spicy chicken and plenty of cheese, all sandwiched between buttery toasted bread. Made in the air fryer for a quick lunch in less than 10 minutes!
I know I am mildly obsessed with all the air fryer grilled cheese variations I have made. There’s just something about a grilled cheese sandwich that I can’t resist and when you take a minute to add different fillings and flavors, they’re really hard to beat!
So if I get a craving for pimento cheese, then I make a pimento grilled cheese!
If I crave pizza, pizza grilled cheese!
Even bacon! I will make a bacon grilled cheese in the air fryer!

Today we’re using up some leftover chicken we had on hand, getting a little spicy, and whipping up a saucy Buffalo Chicken Grilled Cheese in the air fryer!

Bread – We always go for white sandwich bread when making grilled cheese sandwiches. Use wheat if that’s your thing.
Chicken – Precooked and shredded chicken is needed for this recipe, but we don’t need much. You can buy a rotisserie chicken and use it for this recipe, or use the leftovers from our air fryer whole chicken. You could also use canned chicken if you really want to keep life simple.
Cheese– The star of the show here is cheddar cheese. Many buffalo chicken lovers like blue cheese also, if that is you, join the club! I use a little bit of crumbled blue cheese as well. If that is not you, leave this out and substitute in shredded mozzarella.
Seasonings– Buffalo sauce, soft butter, and a small amount of ranch seasoning will finish off the flavors we need for this sandwich!
How to Make Buffalo Chicken Grilled Cheese in an Air Fryer:
Prepare the bread– Butter one side of each piece of bread, spreading out the butter in a thin even coating. Then sprinkle a little bit of ranch seasoning evenly on each buttered slice.
Cheese – Place two slices of bread in your air fryer with the buttered side down. Place one piece of cheese on each slice.
Chicken – In a bowl stir together your shredded chicken and buffalo sauce.
Air Fry – Spoon the chicken over the slice of cheese, add another piece of cheese (and blue cheese crumbles, if using), and top it off with your other slices of buttered bread. Air fry your sandwich for 8 minutes at 360 degrees F, you will need to flip halfway through cooking. Serve hot.

Blue cheese dressing or ranch dressing are both perfect with buffalo chicken grilled cheese.
I am a fan of carrots with my sandwich. I usually eat baby carrots with ranch dressing and dip my sandwich in the same ranch dressing. Any type of fried potato is also good!
Karly’s Tips!
For extra spice, use Frank’s Red Hot rather than buffalo sauce. For a more mild chicken, use less sauce.
Be sure to use a packet of ranch seasoning and not ranch dip mix. The ranch dip mix is quite salty and may be a little overpowering.
If you don’t like blue cheese, just leave it our or sub in shredded mozzarella.

Buffalo Chicken Grilled Cheese

Ingredients
- 4 slices sandwich bread
- 2 tablespoons butter
- 1 teaspoon ranch seasoning mix
- 4 slices cheddar cheese
- 1 cup cooked, shredded chicken
- ¼ cup buffalo sauce
- ¼ cup crumbled blue cheese optional
Instructions
- Spread the outsides of each piece of bread with butter and sprinkle with the ranch seasoning.
- Arrange two pieces of bread, butter side down, in the air fryer. Top each piece with 1 slice of cheese.
- Stir together the chicken and buffalo sauce to combine. Divide evenly between the bread.
- Sprinkle the chicken with the blue cheese and top with the remaining slices of cheese. Place the second piece of bread on the sandwich, butter side up.
- Air fry at 360 degrees for 4 minutes, flip, and continue cooking for 3-4 minutes or until bread is as golden brown as you’d like.
- Serve hot with ranch or blue cheese for dipping.
